1 1/4 | cups sugar |
1/2 | cup butter, softened |
2 | eggs |
1 1/2 | cups mashed ripe bananas (3 to 4 medium) |
1/2 | cup milk + 1 T lemon juice |
2 1/2 | cups flour |
1 | teaspoon baking soda |
1 | teaspoon salt |
1 | cup blueberries, drained |
Preheat oven at 350*. Mix wet ingredients. Add dry but don't overmix. Then fold in blueberries. Bake in two bread pans for 50 min or until a toothpick comes out clean. Let cool completely before slicing.
I 1 1/2ed this using 6 bananas and 1 can of blueberries. I wish I would have added more lemon juice to really give it a kick.
