2 T olive oil or butter
1/2 pound chicken tenders or boneless, skinless
chicken breasts cut into strips
3/4 c sliced fresh mushrooms (opt)
1 T fresh or 1 tsp dried thyme
1/2 T garlic powder
2 c heavy cream
4 oz cream cheese
4 oz cream cheese
1/2 c grated Parmesan cheese
1/2 tsp salt
1/2 tsp pepper

In a large skillet heat olive oil or butter over medium heat. Add chicken and stir-fry for until cooked through. Add mushrooms (if desired), and thyme to chicken. Add garlic powder, cream, cheeses, salt, and pepper. Simmer until thickened, adding milk if necessary to thin. Serve over pasta with sauted strips of red pepper and steamed broccoli.
