Quiche

9" Pie Crust:
1 1/2 c flour
2 t sugar
1 t salt
1/2 c oil
1 T milk

Mix all in pie dish until combined. Pat down. Prick bottom and sides with a fork.
Bake at 400* for 10-15 minutes until light brown.

Quiche:
1/2 lb  ground sausage
1/4 c onion, diced
1/4 c green or red pepper, chopped
1 c artichoke hearts
1/4 c mushrooms
1 c spinach
6 eggs
1/2 c cottage cheese
1/4 c shredded cheese
1 t oregano
1/2 t parsley
1/4 t salt
1/4 t pepper

Cook the sausage and set aside to cool. Saute onion, pepper, and artichokes in same pan until soft. Add the mushrooms and spinach. Heat until wilted and pull off the heat to cool.
In a bowl, whisk the eggs until fluffy. Add remaining ingredients and stir together.
Spread the sausage over the pie crust, followed by the vegetables, and pour the egg mixture on top.
Bake at 350* for 40-45 minutes or until firm and cooked all the way through.

*Don't go crazy with the ingredients, or there won't be enough room in the pie shell. I used a lesser amount of sausage, left out the onions and mushrooms, and added 1/2 roma tomato diced. This just barely fit.
