Biscuits and Gravy

Biscuits: (Always double!)
2 c flour
1/4 t baking soda
1 T baking powder
1 t salt
6 t unsalted butter, very cold
1 c buttermilk (can substitute milk with a splash of lemon juice)

Preheat oven to 450*F.
Combine the dry ingredients in a bowl. Cut the butter into chunks and cut into the flour until it resembles course meal.
Add the buttermilk and mix JUST until combined.

Turn the dough out onto a floured board. Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1 inch thick. Use a round cutter or glass to cut into rounds making 10-12 biscuits.
OR
Grab off balls or dough and hand-form the biscuit shape.

Place the biscuits on a cookie sheet and bake for about 10-12 minutes until the biscuits are a beautiful light golden brown on top and bottom.


Gravy:
In a large saucepan, cook 1 pound sausage draining off any excess grease.

Push to the side of the pan, and prepare a country gravy packaged mix that just adds milk. As it thickens, stir in the sausage.
OR
Sprinkle 1/3 c flour over the sausage.
Once the flour is absorbed, pour in 4 c milk.
Season with 2 t pepper and 1/2 t season salt. Cook until thickened.

Serve hot over fresh biscuits.
