Cheesecake

Easy No Bake version:

2 packages softened cream cheese
1/4 c lemon juice
1 t vanilla
1 can sweetened condensed milk

Beat the first three ingredients together. After beating out the lumps, add the milk and continue to beat until smooth. Pour into a pie plate and chill until firm.

Graham Cracker Crust:

Finely crush one sleeve of graham crackers. This is best done in a food processor. Pour into pie plate. Work 1/2 cube softened butter into the crumbs. If it is still dry, add a few more tablespoons of butter as needed. Press into the pie plate. Refrigerate for at least 10 minutes to set before filling.


Monique's recipe:

1 packet Knox Gelatin
1 cup cold water
16 ounces cream cheese -- softened
1/4 cup honey
1 teaspoon vanilla

In small saucepan, sprinkle knox gelatin over 1/4 cup of cold water, let stand 1 minute.
Stir over low heat until gelatin is completely dissolved.
In large bowl, with mixer, beat cream cheese, honey and vanilla until blended.
Gradually beat in Knox Gelatin mixture and remaining 3/4 cup cold water.
Pour into a graham cracker crust and chill until firm - about 1 hour.
