Pour 1 ¼ c boiling water over 1 c quick oats and one stick of butter. Let stand 20 mins. Mix together:
1 c honey
2 eggs
1 1/3 c whole wheat flour
1 t baking soda
1 t cinnamon
½ t nutmeg
½ t salt
½ c nuts
Now add oat mixture. Stir well. Bake in 9x13 pan 35 mins at 350*.
Topping:
1/2 cup butter (1 cube)
3/4 c chopped walnuts
1/2 cup honey
1 t vanilla
1/2 cup cream or evap milk
1 1/2 cup coconut
Melt butter with honey. Add rest of ingredients. Cook and stir until thickened. Spread on cooled cake.
