Stuffed Peppers / Cassarole

2 1/2 c cooked rice
3/4 - 1 lbs hamburger, sausage, or a combination of the two
1/2 c tomato/spaghetti sauce
1 large tomato, chopped (opt)
3-4 green peppers
salt
cheese, opt

Mix rice, meat, and sauce together with any desired seasoning (Mrs. Dash, Dried onion, salt, ect). Stuff in cleaned peppers which are standing upright in an oven safe bowl. Top with cheese if desired. Bake approx. 15 minutes.

Cassarole:
Cook the rice in a large pot. In a pan, cook the meats, peppers, and tomato together. Add to the cooked rice with a can of tomato sauce. Season if necessary and top with grated cheese.
