Sheet Pan Sweet and Sour Meatballs

 Sweet and Sour Sauce:

½ c apple cider vinegar

½ c BBQ sauce, (Sweet Baby Ray’s)

⅓ c brown sugar

2 t Worcestershire sauce

1 t mustard


Meatballs:

1 pound lean ground beef

1 pound ground turkey

½ c breadcrumbs (1 slice toast)

2 T milk

1 T Worcestershire sauce

1 egg

1 t salt

½ t onion powder

½ t garlic powder

¼ t pepper

 

Preheat the oven to 400 degrees F.

Make the sauce by either mixing all ingredients and sautéing on the stove for a few minutes, or by mixing in a microwave safe bowl and cooking for 1-2 minutes, whisking intermittently.

Combine all the meatball ingredients and mix until evenly combined. Portion the meat mixture into golf ball size meatballs on a sheet pan.

Spoon some sauce over the meatballs. Bake for 20-25 minutes until the meatballs are cooked through (165).

Serve the meatballs with the remaining sweet and sour sauce with rice or potatoes and veggies.

Slow Cooker Sausage and Potato Casserole

32 oz. bag of hash browns, or fresh diced potatoes

14 oz. kielbasa sausage cut into small pieces

1 chopped peppers and onions, frozen

1 cup shredded cheddar cheese

10.5 oz can cream of mushroom soup

1/2 cup milk or sour cream

1 tsp Old Bay

salt and pepper to taste

Grease a slow cooker. Place in the potatoes, sausage, cheese, onions and peppers.

Combine the soup and milk and pour over mixture. Add seasonings.

Cook on low for 6 hours or on high for 4 hours until the potatoes have cooked through.
