2 cans chicken broth
8 oz canned tomatoes
1 ¼ cup finely chopped celery
1 ¼ cup finely chopped peeled apple
½ cup finely chopped onion
½ cup finely chopped carrots
2 ½ T snipped parsely
2 ½ tsp curry powder
2 ½ tsp lemon juice
½ tsp black pepper
4 c cubed cooked chicken
5 c hot cooked rice.
Mix all ingredients together except chicken and rice. Bring to boil and reduce heat to simmer for 15 min. Add chicken. Serve over rice.
Ahh! I am so so so so so glad you posted this one!!! I have been needing a curry recipe for ages. I LOVE CURRY! My old roommates used to make some all the time, but I never found out how. Thank you for this one, I will definitely try it out! :D
